The Wagyu beef striploin is removed from the carcass as a 1 rib shortloin, separated between the rump at the pin bone and the 12th rib. Trimmed of external fat to 10mm, chain on with tail removed 45mm from the eye. Trimmed to a good presentation standard. Packed 1 per vacuum bag.
